Demo Data Analysis Projects Portfolio

Hi,
I am hoping to get some advice on creating a demo data analysis project portfolio.
My goals are different from a student looking for a 1st job in Data Analysis/Data Science.
I am an Actuarial Math Major specializing in numerical analysis  that started my career in Engineering Analysis
I worked as a Senior Engineering Analyst for 8 years using large code to predict performance of weapons systems.
Then I worked in IT in the software industry and transitioned into technical sales and management.
I purchased the Udemy 365 Data Science Course based on a recommendation from Tina Huang in a Youtube video which I am working my way through.
Rather than starting with a complete career path on 365 Data Science, I believe it might benefit me to take specific 365 Data Science courses then  create a Data Analysis Projects Portfolio demonstrating skills to get potential employers.
Based on YouTube videos that analyzed required job skills, I'm thinking about creating demo projects in SQL with Pandas, Python  using SQL accessing PostgreSQL, Python with Matplotlib | Excel Power Pivot and Power BI for data visualization. I will likely create a GUI front end to these demo projects in Python with PySimpleGUI or Streamlit.
Q1) Can anyone offer their thoughts on my suggested demo projects and other demo project suggestions that they think might provide more value?
