Thanks for reaching out.
This is not an indispensable requirement; we only chose to switch between single and double quotes to better illustrate where to write the keys and where - the pairs! As simple as that. But once the difference between the two is clear for you, you can use either single or double quotes, i.e. whatever formatting rules you've chosen to abide by.
