If the photos on my phone are sorted by date, doesn't that make them semi-structured? I;m refering to the definition : "Using different patterns for storing and organizing the data".

Indeed, photo (as well as audio or video) storage on a device is a good example of semi-structured data. Photos, audio and video are types of unstructured data, while the dates are a tag/timestamp which helps you organise the files in a by date.
