Data analyst/Science Skill Building

Hey, I've recently started an internship as a data analyst were we mainly work with Covid Data, and the programs we focus on to go work with this data is Tableau, Excel, and PowerBi, I also have experience using R as well. What are some good projects I could undertake that would help develop my data analyst skills, and could be stand out on a portfolio to future employers?

To your question - the type of projects you can work on really depend on the type of data analyst skills you'd like to develop.
