Especially in the Digital age, as organizations go through Digital Transformation, why is it important to have a vision about improving the lives of customers?

That's a great question, Chase! In fact, I'd love if many would join the conversation, since, I think, it is about going beyond science and optimizing business profit.
First of all, in today's society, we are all customers to somebody else's business, and we are all consumers. Perhaps we are being consumers a little too much, while being human beings relatively less. So, as human beings, we should always strive for improving our quality of life.
Digital transformation (as well as digital marketing or doing business online etc.) is a helpful tool for a business. It can indeed improve the health of a business and through that allow for more investment, research, development, and... why not - improving the lives of customers!

Improving lives of customers is one of the many important factors that actually sets apart successful companies from unsuccessful one, at least thats what I think, because as a consumer would always willing to purchase product of company which puts his/her needs above the profit.

People and, hence, consumers are all different but in general - I'd agree, it shouldn't be all about the products and pecuniary reasons!

Improving lives of customers also improves the comunity and could motivate employees who work for the company and a give sense of pride in the work that they do. This can also make consumers more loyal to the brand and willing to pay extra for better quality.
