Text Data Mining Definition

It is mentioned in the lecture that "Text data mining is the process of deriving valuable, 'unstructured' data from a text", i am confused whether we aim to derive unstructured data? As our goal is to go towards structuring and organisation of data for further analysis.

Should it be 'structured' data instead or am i wrong somewhere?

You are referring to two different steps from the process. We can have a goal to obtain structured and/or organised data, but we have to obtain it from somewhere. Quite often, the initial source contains unstructured data that we either cannot decipher or use. Also, sometimes it is huge. Data mining can help us obtain the meaningful, valuable parts from this unstructured data.
